4. Artisan S-Grind Gyuto

This hybrid style blade was forged using one of my favorite techniques, san mai, which translates loosely from Japanese as “three flat things.” Laminated with love by hand in my shop. Just over 8”, this blade features a fun using, S-grind that is thin behind the edge. The full tang bolster imparts a stout feel while the majority hidden tang adds to the comfort, appeal and ease of maintenance while shedding weight. Extra deep blade and larger handle make this a real workhorse of a smaller blade.

6. Artisan Chef

I’ve always enjoyed the simple purity of forging a piece of 2000 degree steel into a chefs knife using a hammer and anvil. Ideas, shapes and lines evolve and present themselves with each hammer blow.
