8. Cascade Sujihiki / Slicer

I recently made a set for Chef Charlie McKenna in Chicago and one of the blades was a shorter than normal sujihiki and I absolutely loved its feel and functionality. So I made another. The full tapered tang imparts a well balanced yet stout and timeless feel. Forged from bold layers of contrasting high carbon steel, known as damascus by many, the forging process created this unique flowing pattern inspired by the peaceful and beautiful cascades we love to stop and rest at on one of our favorite hikes near Roan Mountain, TN. 9. Tennessee Toothpick

I forged this blade years ago and wasn’t ready to finish it until recently. It’s the perfect addition to your pocket, bag or glovebox. Forged from pattern welded high carbon steel and etched deep for a beautiful texture before being polished for a bright finish. Leather non-carry sheath by Bud Siniard in Watkinsville, GA.

10. Bunka

This hybrid style blade was forged using one of my favorite techniques, san mai, which translates loosely from Japanese as “three flat things.” Laminated with love by hand in my shop. Just under 6”, this blade features a versatile, slightly convex grind that is thin behind the edge and easy to maintain. The full tang bolster imparts a stout feel while the majority hidden tang adds to the comfort, appeal and ease of maintenance while shedding weight. Extra deep blade and larger handle make this a real workhorse of a smaller blade. Handle fitment suited for large hand size.

This 5 3/4 k-tip blade features a versatile, slightly convex grind that is thin behind the edge and easy to maintain.
