This one was forged to shape from high performance reclaimed 52100 carbon steel sourced from an industrial roller bearing from an old friend in Birmingham, AL and features handle material sourced from our own 99 year old home here in Jonesborough, TN. After forging, the steel blade undergoes an extensive normalization, grain size reduction, triple quench and tempering heat treatment to ensure extremely fine grain structure and thorough hardness using tricks I learned from from Bill Burke when I studied with him in 2016. The feel is enhanced by a silky smooth satin-polished blade, a rounded and comfy spine and a tapered tang and spine. This classic HWF gyuto profile is waiting to be put to use in your kitchen.
