Heritage Upswept Chef I

$985.00

The handpicked reclaimed carbon steel is lab tested before being hand forged. After forging, the steel blade undergoes an extensive normalization, grain size reduction, triple quench and tempering heat treatment to ensure extremely fine grain structure and thorough hardness using tricks I learned from from Bill Burke when I studied with him in 2016. The feel is enhanced by a silky smooth satin-polished blade, a rounded and comfy spine and a tapered tang and spine. This one was forged to shape from high performance 52100 carbon steel sourced from an industrial roller bearing from an old friend in Birmingham, AL and features reclaimed Gibson Guitars maple. The combination of a generously upswept geometry and a deep heel make this highly functional blade excel at both large deboning tasks and heavy chopping.

  • size: 8 5/8” blade / 13 1/2” overall / 2 1/4” heel

  • weight: 241 grams

  • blade: 52100 roller bearing (Birmingham, AL)

  • handle: stabilized toasted curly maple (Gibson Guitars, Tennessee), turquoise g10
