Heritage Granny Paring - Shanks Oak

$275.00

Originally a paring knife I made for Chef Sean Brock, he coined it “the Granny Paring knife” because of the style of cutting he used it for. After the response to these in the Autumn 2024 sale, I introduced the design to my Heritage Collection, where storied materials and elegant finishes come together. This blade is shaped from a reclaimed high carbon lumber mill steel and polished to an easy to maintain satin finish. Full tang, petite, razor sharp and dressed to impress. (2 available, actual knife may differ slightly from image)

  • size: 2 7/8” blade / 7” overall

  • weight: 42 grams

  • blade: reclaimed lumber mill band saw carbon steel, Wrens, GA

  • handle: stabilized 700-year old Shanks Oak (gift from town) storm felled in Jonesborough, TN, copper hardware
