This one was forged to shape from high performance 52100 carbon steel sourced from an industrial roller bearing from an old friend in Birmingham, AL and features ironwood from Arizona on the handle. The combination of a slender upswept tip and a deep heel make this highly functional chefs knife excel at both heavy chopping and delicate carving. Forced patina.
