2. Cask Strength Copper Still Chef

Highlighting the beauty of salvaged materials, this thin and light blade is made by stacking and fusing bourbon barrel bands with copper from an old still and high carbon steel. The hard working edge is protected in a labor intensive recycled cladding. The blade features a versatile, slightly convex grind that is both thin behind the edge and easy to maintain. After making the JC Trimmer, local BBQ joint (Project BBQ, Johnson City, TN) owner, Alex, asked about adding a longer blade to his arsenal. It was time I redesigned a mid-length fillet for a few years. This timeless, high carbon steel blade is polished to an easy-to-maintain stone washed finish complete with a sturdy full tang handle.

This nakiri features a heavily forge-textured spine with a dark, durable kuroichi finish and a rainbow of torch temper colors. Bevels are polished to an easy-to-maintain satin workhorse finish. This build is finished in reclaimed Blackwood from a clarinet factory in Paris and locally sourced quarter sawn, smoked sycamore.

Originally a paring knife I got to make for Chef Sean Brock, he coined it “the Granny Paring knife” because of the style of cutting it lends itself to.
